The cuisine of Puebla is known world wide for its originality and the quality of ingredients; two of the best known specialties originating here are mole poblano and chile en nogada. The city is also an important center of learning, counting three major universities and several specialized institutes of higher learning.
The city used to be the main southern capital for the Mexican pottery industry, many tile factories still exist. Around the city you can find many examples of this rich ceramic history in the hotels and restaraunts, churches and a permanent exhibition on the Playa de Armas.
