My absolute favorite: located next to Piazza della Signoria and in front of the American Express Office. The piazza itself is charming enough, enter the Hosteria and feel comfortable. Something really new for Florence - breakfast, lunch, snacks, fish restaurant, and music! This bar has a restaurant hidden in the back that serves mostly fish, often hard to find and expensive in land-locked Florence. Don't skip this place if you're visiting Florence! I never ate such delicious pasta before in my whole life. Just grab a seat and blend in with the locals. Be there in time though, because this restaurant can get a bit crowded.

Located behind the Mercato di San Lorenzo in the Piazza Mercato Centrale this spot is a must for anyone visiting Florence. Mario is only open for lunch, Monday through Saturday. There is always a line! To avoid the line, come before noon before the locals arrive. Try the Zuppa di Verdura, vegetable soup served with a slice of toasted bread on the bottom. Acqua al Due

Reservations are a must here. Everyone orders the pasta tasting menu, called an "Assaggio di Primi," five varieties of pasta with five different sauces. The dish should be enough to fill anyone, but if not, there is also a selection of salads and desserts as well as a fabulous regular menu. The service can be rushed as they do several seatings.  However in more recent years it has been replying on a past reputation that it no longer lives up to. Worth a visit but only if you like to eat surrounded by foreign student with not an Italian in sight.
