One can either stay in the town of Gokarna, or can arrive at the beaches and stay at the shacks. Hotels in Gokarna are well built structures. Some shacks on the other hand are thatch huts, common bathrooms, and may not have electricity - and that adds to a wonderful experience. At Om beach, you will find SwaSwara, a beautiful resort that offers ayurveda therapies and health food.
